Quick Tips |

Drying Fresh HerbsPlace fresh herbs in a single layer between two paper towels and microwave for about 2 minutes on high. You may want to go with 1.5 minutes and 15 seconds until you are satisfied. Works with basil, cilantro, parsley, and mint. Maybe others. After drying, I place them in a labeled ziploc bad and store in the freezer. |

BaconBuy pre cooked bacon. The price per ounce after cooking regular bacon isn't much different than pre cooked. 16 strips in a bag and they heat in about 20 seconds in the microwave. |
|
Chicken BreastsWhen you need cooked chicken breasts for a recipe, you can toss the individually frozen breasts in the crockpot at lunch with a little water on low – they’ll be thawed and cooked by the time you’re ready to make dinner.

Christmas TurkeyA tip for your Christmas turkey (our Easter or Thanksgiving!) Cook your turkey right side up. That is, with the breast and legs down. As the turkey cooks, the juices run throught the breast keeping it moist.
If you cook your turkey in the oven instead of a roaster like I
do (b/c I don't have one!), my trick to moist, fall apart turkey
is to butter and season the skin and place the turkey in a
preheated 500 degree oven for 30 minutes. After 30 minutes, turn
the oven temperature to 300 and cook the recommended minutes for
the weight of your bird. The high heat seals the skin and keeps
the meat inside very moist.
